Summer Pie topped with a crispy, caramelized oat layer

Celebrate the season with this easy summer pie recipe, featuring sweet berries and a golden, caramelized oat topping. Perfect for picnics, barbecues, or cozy evenings.

Ingredients

Berries

  • 500 g berries (strawberry , raspberry, blueberry, blackberry) fresh or frozen
  • 1 tbsp light muscovado sugar
  • 2 tbsp Maizena
  • 1 tsp ground cardamom
  • 0,5 tsp vanilla powder

Crispy, Caramelized Oat Layer

  • 175 g butter
  • 1 dl granulated sugar I use raw cane sugar
  • 1 pinch salt
  • 3 dl rolled oats
  • 1,5 dl flour freshly milled or store bought
  • 1 tsp baking powder
  • 0,5 dl light syrup
  • 1 tsp ground cardamom
  • 0,5 tsp vanilla powder

Instructions

  • Preheat the oven to 180°C (356°F).
  • Grease a pie dish, about 22–26 cm in diameter. Mix the berries with the muscovado sugar, maizena, cardamom, vanilla and place them in the dish.
  • In a bowl, mix together granulated sugar, salt, rolled oats, flour, cardamom, vanilla and baking powder.
  • In a saucepan, combine butter and light syrup and melt over low heat, stirring.
  • Pour the butter mixture into the bowl with the oat mixture and stir to combine.
  • Spread the batter evenly over the berries in the pie dish.
  • Bake in the middle of the oven for about 30 minutes, or until the top is golden brown.
  • Can be served warm or cold, store in the fridge.
  • Enjoy! Delicious with vanilla ice cream, custard or honey whipped cream(heavy cream, honey and vanilla to taste).

Notes

The Muscovado suger and the raw cane sugar gives a deeper more savory flavor than regular granulated sugar but of course you can use regular sugar instead.
