Look no further. This super easy Creamy Chicken Casserole will undoubtedly be a weekly staple. It’s suitable for a low-carb diet when served with a salad and broccoli. Or equally delicious served with potato (to soak up all the delicious gravy), mashed potato and a salad. You can easily make it suitable for vegetarians. It is also the ultimate comfort food.
This is my go to dish when we get unexpected guests, since I always have the ingredients at home and it doesn’t require a lot of preparation. It’s also the most requested meal in our household and from many guests as well.
Creamy Chicken Casserole
This easy Chicken Casserole Recipe has very few ingredients. Only 7. I’m sure you already have them at home. You will need chicken, mushroom, creme fraiche, heavy cream, mushroom soy, Sriracha sauce and some Maizena. That’s all the ingredients you need for this super easy Chicken Casserole. Put it all in an oven safe dish and it will take care of itself.
I made this delicious chicken casserole for years, improving it from the original recipe. It’s the perfect meal for those chilly autumn and winter months. But I have to admit I eat it all year round. I’m sure this easy Creamy Chicken casserole recipe will be loved by the whole family. Leftovers? No problem the taste is even better the next day. It will last in the fridge for 3 days. I don’t recommend freezing.
Creamy Chicken Casserole
Ingredients
- 1 kg bone free chicken thighs Qourn filets for vegetarian option
- 5 dl heavy creme
- 5 dl full fat creme fraiche
- 1 dl mushroom soy
- 4 cloves of garlic pressed
- 250 g shitakee mushrooms
- 2-4 tbs sriracha sauce
- 3 tbs Maizena
Instructions
- Preheat the oven to 200 ℃
- Spread out the chicken in an oven dish
- Slice the mushroom and spread it over the chicken
- In a bowl whisk togheter the heavy creme, creme fraiche, soy, siracha sauce, garlic and Maizena
- Pour the sauce over the chicken and mushroom, make sure everything is covered in the sauce.
- Put in the middle of the oven for 40 min
Notes
- Adjust the amount of Siracha sauce depending on desired strength.
- The amount of Maizena can be adjusted for desired thickness of the sauce
- Chicken can be replaced with Qourn filets. The amount of Maizena needs to be adjusted down a little or the sauce will become thicker.
