One of my favourite things to do when I am in London is to have Afternoon Tea. A really good cup of Earl Grey tea and Scones, heaven. It has to be scones with Clotted cream of course, wouldn’t be the same without it. Recently, I discovered the delight of making scones on fresh milled flour, and I think I have found the perfect recipe.
These Scones are made with fresh milled wheat flour with a hint of Cardamom. The fresh milled flour gives them an earthy richness, unlike anything I’ve ever tasted before. The Cardamom adds a subtle aromatic warmth that pairs beautifully with the sweetness of the scone and the richness of the Clotted cream.
What I love most about using fresh milled flour is the way it transforms a simple recipe into something truly special. The texture of the scones becomes more tender, with a slight nuttiness that you just can’t get from store-bought flour. It’s as if you can taste the care and effort that goes into milling the flour. Making each bite a little more satisfying.

Scones made with fresh milled flour and Cardamom
Ingredients
- 400 g freshly milled whole wheat flour
- 100 g of room temperature Butter
- 5 tsp baking powder
- 1/2 tsp salt
- 2 tsp Cardamom
- 4 dl Milk
Instructions
- Cut the butter in thin slices so it can get to room temperature
- Preheat the oven on 250 ℃
- Mill your Wheat kernels on the finest settings
- Mix all the dry ingridients
- Add the butter and work into the flour mix. ( I like using my hands)
- Add the milk
- Combine without overworking it. The dough will be very sticky
- Make 4 equal size relativily flat round bread
- Shape them with lightly floured hands
- Cut an X on each bread and prick with a fork
- Put them in the oven for 13-15 min, until they hava a golden colour
Notes
- The dough is supposed to be very sticky
- If it's to loose let it sit a few minutes before putting it on the baking sheet
