One of my favourite things to do when I am in London is to have Afternoon Tea. A really good cup of Earl Grey tea and Scones, heaven. It has to be scones with Clotted cream of course, wouldn’t be the same without it. Recently, I discovered the delight of making scones on fresh milled flour, and I think I have found the perfect recipe.

Cardamom Scones made with fresh milled flour

What I love most about using fresh milled flour is the way it transforms a simple recipe into something truly special. The texture of the scones becomes more tender, with a slight nuttiness that you just can’t get from store-bought flour. It’s as if you can taste the care and effort that goes into milling the flour. Making each bite a little more satisfying.

Cardamom is one of those spices that can easily be overlooked. But when used just right, it elevates the flavor of baked goods to new heights. In these scones, it adds a twist that makes them feel both familiar and unique at the same time.
